Bourbon Chicken

This easily one of my husbands favorite meals! And no worries--there's no alcohol in this.

Bourbon Chicken

2 pounds boneless skinless chicken breasts
2 garlic cloves (minced)
1/2 teaspoon ginger (I used ground ginger)
1 teaspoon crushed red pepper flakes
1/2 cup apple juice
2/3 cup light brown sugar
1/4 cup ketchup
2 tablespoon cider vinegar
1 cup water
2/3 cup soy sauce (Winco's brand is gluten free)

Cut chicken breasts into bite-sized pieces, and if you choose lightly dust with cornstarch.

Cook chicken in a pan on medium high heat with a bit of oil until cooked through. Remove the chicken to a plate and cover, keeping the chicken warm.

In a bowl combine all sauce ingredients.

Pour into the pan and bring to a boil. Add chicken bits back to the pan, reduce the heat and simmer for 10 minutes.

We like to serve this on brown rice with steamed broccoli on the side.
