Sesame Encrusted Baked Chicken Fingers

Ingredients: 
  • 3 lbs chicken, cut into strips
  • salt and pepper to taste
  • 2 T plus 2 t sesame oil
  • 2 T plus 2 t low sodium soy sauce
  • 1 1/2 C toasted sesame seeds
  • 2 tsp course salt
  • 1 C panko
  • olive oil spray (I used my Misto)

Directions:

Preheat oven to 425°. Spray a baking sheet with non-stick oil spray.

IN ONE BOWL combine the sesame oil and soy sauce. 

IN ANOTHER BOWL combine the sesame seeds, salt and panko.

Place chicken in the bowl with the oil and soy sauce, then into the sesame seed mixture to coat well. 

Place on the baking sheet; lightly spray the top of the chicken with oil spray andbake 8 - 10 minutes. 

Turn over and cook another 4 - 5 minutes longer or until cooked through.
