Tomato Soup and Grilled Cheese Sandwiches

So fast, and so easy!! I cooked the sandwiches in our george foreman, and they were perfect!! Nathan raved, and my boys were happy. It's pretty nice having happy tummies!

Ingredients

1 T Oil
1 onion, diced
2 cloves of minced garlic
2 T butter
2 T Flour
3 C Broth--any kind
6-7 tomatoes, roughly chopped
1 T Balsamic vinegar
2 t dried basil, or 2 T fresh basil
1 t paprika
salt and pepper, to tast
1/4 C Milk--tonight we used half and half

Directions

Heat up a pot and heat up the oil. Add onion and garlic, cooking until the onion is soft and translucent. 

Add butter and melt. Slowly whisk the flour into the butter and onion mixture. Cook for 1 minute.

Slowly whisk in the broth, making sure there are no lumps. Add tomatoes, vinegar, basil, paprika, salt and pepper. Bring to a boil. Reduce heat and let the soup simmer for 10-15 minutes, or until the tomatoes have cooked down. 

Remove from heat and add milk. Carefully blend the soup with an immersion blender until completely smooth.
