Loaded Cauliflower Casserole

Ingredients

* Mashed cauliflower 

1½ cups shredded cheddar cheese 

* 2 cups shredded cooked chicken breast 

* 10 strips bacon, cooked and sliced or crumbled 

2 green onions, sliced, for garnish 

INSTRUCTIONS

Prepare the day before--

Mashed Cauliflower--

2.5 pounds cauliflower florets

1 pound chicken, shredded

1/4 C water

2 T butter

1/4 C sour cream

1 t coarse sea salt

1/4 t black pepper    

Place the cauliflower in a microwave-safe bowl with ¼ cup of water. Cover and microwave on high for 10 minutes, until cooked through. Let cool slightly, then drain.

Place the cooked cauliflower in a food processor or large mixing bowl, along with the sour cream, butter, salt, and pepper. Pulse or blend using an immersion blender until smooth. 

Store in the refrigerator for use later in the week.

Day of--

1. Preheat the oven to 400°F. 

2. Evenly spread the mashed cauliflower in an 8-inch round casserole dish or 3½-quart cast-iron braiser. 

3. Sprinkle the cheese over the cauliflower, then top with the chicken and bacon.

4. Bake for 20 minutes, until the cheese is browned and bubbling. 

5. Let cool slightly, garnish with the green onions, and serve!

FRESH PRODUCE 

Cauliflower-- Around 7-8 pounds 

Green onions, 4 

MEAT

Chicken, 3 cups

DAIRY 

Shredded cheddar cheese--1½ cups 

Bacon--1 pound

Butter--2 tablespoons 

Sour cream--¼ cup

SEASONINGS 

Sea Salt--1 teaspoon

1/4 teaspoon ground black pepper
