Cashew Chicken

Ingredients--
2 tbsp garlic or garlic powder
2 tbsp cornstarch
1/2 cup, plus 2 T soy sauce
1/4 cup black vinegar or balsamic vinegar
2 tsp chili garlic sauce
1/4 cup sesame oil
1/4 cup water

2 lbs chicken breasts, cubed
1 1/2 green peppers, cut in chunks
1/2 red onion, cut in chunks
1 1/2 carrots
1 can sliced water chestnuts, drained
1 C cashews

3 C rice

Instructions--
Mix garlic, cornstarch, soy sauce, balsamic vinegar, chili garlic sauce, sesame oil, and water in a separate bowl until cornstarch is dissolved. Pour sauce into pan and add the chicken. Turn on the heat to medium-high. 

Stir often while the sauce cooks into the chicken, making sure the chicken gets completely cooked.

When cooked, add green pepper, onion, and water chestnuts. Cook until peppers and onions are soft. 

One minute before you're ready to serve it, add the cashews. If you add them too early they might get soggy and they also get flaming hot!

Add some rice and you're all done! 

It's definitely a crowd pleaser and a delicious left-over meal!
