Honey Curry Chicken


3 pounds chicken breasts
1/4 c butter or margarine
1/2 c honey
1/4 c prepared mustard
1 tsp curry powder
1 tsp salt

Preheat oven to 375.

Place chicken in a greased 9x13 casserole dish. (For faster baking, you can cut the chicken into chicken tenders, or leave them whole.)

Melt butter in a pot on stove. Add other ingredients to pot and warm through till all ingredients are combined.

Pour mixture evenly over the chicken.

Bake uncovered for 25 minutes, or until chicken is cooked through. If you cut the chicken into tenders, the cooking time may vary. Check on the chicken occasionally to gauge how much time is needed.

Serve on rice, couscous or quinoa with a green vegetable on the side. In our house that's usually steamed broccoli or green beans.
